Souvlaki, Tzatziki and Greek Salad

Tonight's dinner was one of my standbys. The Souvlaki is a George Stella recipe, the tzatziki and Greek salad are just seat of my pants recipes.


Souvlaki


Souvlaki
2 T olive oil
2 T fresh oregano (1 1/2 T dry)
2 T finely chopped red onion
1 1/2 t kosher salt
1 t black pepper
2 cloves garlic, chopped
2 1/2 lbs. chicken or pork - cut in to 1 1/2" cubes
1 lemon cut in to wedges

Mix everything through the garlic and then add your meat of choice. Let marinate for a few hours and the grill until done.

Serve with tzatziki, and brown rice.

Tzatziki
1 small container Greek yogurt
1/2 cucumber, seeded and grated
1 pinch of dill
1 small clove garlic, finely minced

Mix all ingredients.

Greek Salad
Cucumber - sliced
Tomato - sliced
Feta cheese - crumbled or cut in to cubes
Olive oil
Vinegar of your choice (I used white balsamic)
S&P
Dill

Basically, this is all to taste. I used 1/4 cucumber, 1 Roma tomato, 1/4 cup feta cheese, 1 t olive oil, a few squirts of vinegar and dashes of salt, pepper and dill.
